SALISTERRA’S NEW MENU BY CHEF RICARDO CHANETON DEBUTS WITH A MEDITERRANEAN MELANGE OF SEASONAL DELIGHTS

SALISTERRA’S NEW MENU BY CHEF RICARDO CHANETON DEBUTS WITH A MEDITERRANEAN MELANGE OF SEASONAL DELIGHTS

Hong Kong, 7 March 2024 – Upper House Hong Kong debuts a refreshed menu at its signature restaurant Salisterra by newly appointed culinary advisor chef Ricardo Chaneton of Michelin-starred restaurant MONO by JIA Group. The flavours and cooking styles are inspired by the distinct seasonality and traditions of the Mediterranean. Guided by Chaneton’s time in Denia, Spain on the coast of Costa Blanca and Menton, France in Côte d’Azur, his passion for Mediterranean cuisine draws inspiration from his Italian heritage and cooking from the heart. Savour bold, contemporary dishes with authentic flavours both familiar and far-flung in the beauty and comfort of Salisterra’s dining room.

Since opening in 2021, Salisterra has been rooted in capturing the essence of the Mediterranean in an elevated dining experience that celebrates the rich cultural diversity and vast landscape that defines the palates of the region. Chaneton expresses this through his modern interpretation of classic dishes and incorporates a combination of fresh, local produce

and Mediterranean ingredients harvested at the peak of their seasonality. Signature dishes

include starters of Green Asparagus Soup with an herbaceous hint of lemon, thyme, and caraway seed poured over a ricotta dumpling wrapped in fresh spinach leaves; and a roasted

Stuffed Zucchini, delicately assembled with a flavorful blend of couscous, spelt, pine nuts,

fresh herbs and mozzarella, finished with a light saffron sauce. With sumptuous main courses

portioned perfectly for sharing, expect a generous serving of Meloso Rice – Spanish bomba

rice cooked in a fragrant Spanish sofrito, topped with roasted baby artichokes and sautéed

morel mushrooms. End on a sweet note with a slice of Pastafrola Pie filled with seasonal fruits

wrapped in a shortbread tart, enjoyed with a dollop of Madagascan vanilla Chantilly cream,

served tableside.

Chaneton works closely with Upper House Hong Kong culinary team and head chef Tony Leung to

present a colourful tableau of Mediterranean dishes. “At Salisterra, I can share my passion

for Mediterranean cooking by recreating timeless dishes with heart. A lot of the dishes we put

on the menu are the same dishes I grew up making with my Italian grandfather and reminds

me of the time we spent together. With chef Tony, we developed a menu that elevates

Mediterranean cuisine, but also embodies the warmth, generosity, and abundance that you

feel when you’re there in the Mediterranean,” says Chaneton. “We’re looking forward to

serving our guests with a table full of interesting yet delicious dishes.”

“I’m excited to be working with chef Ricardo on the new menu as Salisterra continues to

evolve. With Ricardo’s experience and guidance, we can take our guests to the Mediterranean

in a gastronomic journey filled with authentic flavours that reflect the region,” says chef Tony

Leung, Head Chef of Upper House Hong Kong.

Dishes will be introduced each month to follow the seasonality of the Mediterranean

ingredients. For more information and to view the menu, please visit the website. For
