The exclusive partnership celebrates the creativity and freedom at the heart of The House Collective and marks 180 years of the Baccarat’s Harcourt Collection, by introducing a series of four cocktails served exclusively at all the Houses for a limited time in December. Each of the Houses’ team of mixologists will design three champagne cocktails alongside with one special Baccarat cocktail “Harcourt 180” presented in the Harcourt 1841 glass, currently served at the Baccarat Maison in Paris for the Harcourt anniversary. Head Bartender Gary Hu of Café Gray Deluxe at The Middle House creates “Par Avion”, in which he takes a contemporary twist of the classic Aviation cocktail by substituting gin with champagne to enhance its floral element. Inspired by tea, William Zhang, Head Bartender of Jing Bar at The Temple House balances the ingredients of Lapsang infused Sakura Vermouth, Fig Campari, Dok Anchan and Brut Champagne, giving a glowing dark red colour to “Garnet”. Under the leadership of Operational Manager Harry Zhang, The Opposite House team mixes gin, Osmanthus wine, hawthorn with tamarind juice and Brut Champagne to create the mellow, sweet-sour ”Pekin Royale” while Jack Leung, mixologist of Salisterra at The Upper House creates “Ruby” – a refreshing Tito’s cocktail packed with delicate taste of fig, blueberry and lemon and smoothing smell of lavender.
